Hi Cory,

Thank you for your report and helping to make Ubuntu better.  First,
your devices appear as /dev/sd* rather than /dev/hd* because the kernel
is now using the libata subsystem which makes your devices appear with
the /dev/sd* syntax.  Also, the following wiki will be helpful in
answering your /etc/fstab UUID questions:

It seems you may have edited your /etc/fstab at some point to where it
was considered non-standard and so was not updated automatically.  Hope
