@Heather Ellworth: I just tried to completely remove libreoffice as you suggested, then re-enabled Libre Office's PPA, then reinstalled as you suggested. But to no avail. Libre Office still immediately crashed whenever I try to create a new or open either a Writer document or a Calc spreadsheet.
I notice that one of my laptop's however has not that problem. It's the one of my son. There, Libre Office 7.0 seems to work allright (at least it doesn't crash when I try to create a new Writer doc or a Calc spreadsheet) ... The only 2 machines where I have the issue are machines that underwent several upgrades from LTS to LTS. One, my desktop got upgraded from Ubuntu 14.04 up to 20.04 (going through the intermediary upgrades) and my other laptop went through 18.04 -> 20.04.
