subiquity should definitely reprobe on udev events. The only question in
my mind is whether we should do a full reprobe on each event (or, well,
group of events, let's not be daft) or try to be clever and more
incremental, e.g. only probing for each new device as it appears. I
guess we can implement the former more straightforwardly so we should do
that and then maybe make improvements as time / need arises.
