For the first, the easy way to enable pulseaudio "the right way" is to install the pulseaudio-esd-compat package, then set "use sound server" in System->Preferences->Sound.
The second can be accomplished with "asoundconf set pulseaudio", or selecting pulseaudio from asoundconf-gtk.
