All-click Ubuntu Desktop, and all-snap Ubuntu Desktop have been discussed at length before. There are many advantages and challenges in delivering that.
As you may know, the Ubuntu Core systems are exactly that - the all- snaps based systems, which target IoT devices. Many of them are quite sophisticated and include display manager and browser rendering engine (kiosk mode). But it is still incomplete to be usable as an Ubuntu Core Desktop system. But you can try an all-snaps system already! Just head to https://www.ubuntu.com/download/iot and checkout out images for supported platforms, which does include Intel images.
