This (from your log) is happening while trying to remove/purge it:

Apport will report the  last error, and you tried to clean it up which is good.
But the logs do no more contain the original issue.

I think this is because you are trying to purge mysql partially, like in
bug 1519557

I assume you are now stuck unable to remove it (that is what I see atm)
nor install it right?

Never the less I'd need to see what happens on install of mysql?
  $ apt install mysql-server-5.7
  Please attach the full console log this triggers as well as any new entries 
in /var/log/mysql/error.log
