As of today, the ibus-libpinyin package has replaced ibus-sunpinyin. This is a move in the right direction. (Finally !)
However, the default Chinese input still points to ibus-sunpinyin, resulting in users unable to input Chinese characters, even when selecting (simplified) Chinese locale during the liveUSB boot. The default Chinese input method should also change to ibus-libpinyin. Thanks.
