Totem uses GStreamer for playing everything, always. If 'gstreamer1.0-libav' is installed then GStreamer uses libav* (ffmpeg). Thus in your case Totem is using ffmpeg, but that is not the default for a fresh Ubuntu installation as gstreamer1.0-libav is not installed by default.
