If I run "sudo dpkg-reconfigure -phigh xserver-xorg", the new xorg.conf gives me the same results from when I removed my xorg.conf completely. gdm is at 1280x768 @ 60 and my maximum resolution when I login is 1280x800 @ 60. Attached are the xorg.conf and Xorg.0.log. Thanks.
