Looking at the open-vm-tools package libfuse-dev is a dependency : -- https://packages.debian.org/source/sid/open-vm-tools
I figured that probably did not get pulled in correctly so I grabbed libfuse-dev on Linux Mint 18 -- sudo apt-get install libfuse-dev Then I just reconfigured and restarted the VM. Copy/Paste and Monitor Res are back.
