Today I bit the bullet, and installed gutsy on my machine, formatting /. No 
more /dev/mapper, no more problems with the raid5 array being assembled 
properly at boot. Of course, I backed up /etc before, and /home is on another 
partition, so no problems.
It looks like a case of bitrot - I hadn't done a clean install on this server 
since dapper.
