Apple branded in-ears still seem to do different signaling for the
volume buttons even though they have a CTIA pinout.

I currently don't have a phone with Ubuntu on it, but I tested yesterday
with some older ME186LL/A from Apple and Sony MH1C[1], where the volume
buttons for Sony were working on the Nexus 5 and the Lumia 730. If doing
the same thing on the operating system side no matter if an Apple or
Android compatible headset is plugged in doesn't violate anything like
perhaps a patent, then Matthias' first request should be possible to
implement.

3 and 4 look like standard actions and should also be possible. (Perhaps
these already do work?)

Muting the mic could be made possible with a new button press gesture
during call.

1: both were cheap to get on Ebay in the past, today I think you would look for 
something else like Xiaomi piston or the latest Apple ones
