Currently in dconf, both my motion-acceleration and motion-threshold
values are -1 (default) and I prefer it this way, but everytime I go
into the mouse settings in the settings panel, it changes the values to
1 and 10 respectively without me changing the pointer speed slider.

This is incredibly undesirable behavior and leads to confusion for users
who just view the settings and suddenly have drastically different
pointer speed/acceleration. IMHO, the default values of -1 offer the
best pointer motion. All other values set by the slider cause very weird
mouse motion, such as acceleration kicking in at weird moments (probably
due to the motion-threshold settings).

Expected behavior:
1.) Simply VIEWING the mouse settings should not change the default 
motion-acceleration and motion-threshold values of -1 to something else
2.) There should be a tick on the slider indicating the position that sets the 
default values of -1, so that users can return the mouse settings to default if 
they so choose. Preferably, the slider should snap to that tick. Currently the 
default values aren't even on the slider!

Sidenote: The motion-threshold values also need to be calibrated better
on the slider. It sets motion-threshold values up to 10, which is crazy.
How can anyone use their mouse properly if they have acceleration kick-
in after 10 whole pixels of movement?

The Gnome 3.14 mouse settings do this properly, perhaps merging their
code into unity-settings could be the solution?
