I have found the source of the problem.

It seems that for HDDs larger than 2TB, they need to be explicitly set
to Partition table of GPT, and the current installer isn't able to do
this as well as not being able to setup the necessary partition of at
least 1.0MB with the flag 'biosgrub'

I had to use GParted (I used GParted Live CD) to set up the Partitions and the 
1.0 Partition with no file system and the flag set to 'biosgrub' and then used 
the 12.04.3 Installer and it worked fine.
Once you get to the partitioner part, the necessary partitions are already set 
and you just do the RAID configuration,
add the swap and main partitions to the array, and set them up as - swap area, 
and ext4-mount point /(root) respectively.

No need for bootable flags.

Installer installs grub fine and all joy.

None of the tutorials hit this snag as they all use Virtual machines
with very small partitions.

Not sure whether this would still be classed as a bug
Maybe worth a mention in the Official Documents?
