Thank you for reporting this, and trying to help make Ubuntu better. However, this is the expected behaviour of "apt-get remove". "apt-get autoremove" should remove packages that were installed as dependencies and are now no longer needed.
Furthermore, I'm a little surprised that removing evolution-data-server didn't break something.
