(Note: although the VIA module is not listed explicitly, it also uses 
ac97_quirk)

You make the changes in /etc/modprobe.d/alsa-base.conf file. For example, you 
might add the line:
options snd-via82xx ac97_quirk=swap_surround

You'll need to restart alsa for changes to take effect:
sudo alsa reload
