sensors-detect is not going to find your fan, as it is controlled through BIOS/ACPI and is not manually configurable by using PWM like a fan attached to a desktop motherboard fan header.
The real issue here is that your system is running so hot (which causes the fan to run full speed to prevent hardware damage). My educated guess is that the opensource radeon driver is causing your GPU (and subsequently, the CPU and other internals) to heat up.
