After seeing what packages will also be removed by removing the 3 packages I 
mentioned, I've decided to only remove:
xserver-xorg-video-nouveau

This also causes the removal of:
xserver-xorg-video-all
(The information for which assures you that it can be uninstalled without 
consequence if you don't want some graphics drivers installed.)

This also explains why xserver-xorg-video-nouveau was installed in the
first place: ALL drivers are installed by default.  If nouveau is the
problem here, I suspect it's a problem related to it being able to
detect the NVIDIA card but being unable to use it.
