This problem happens to me everytime I scan many pages in a row. When
the RAM of my PC is over, the program crashes.

Other programs, such as XSane, scan to temporary files, so that it is
not necessary to keep all the scanned pages in memory, and they allow
the possibility to resume scanning what you started some other day.

My workaround for this problem, is scan in chunks of 15-20 pages, and
save it as separate files. Then, I join them with pdftk:

pdftk file1.pdf file2.pdf filen.pdf cat output fullfile.pdf
