I have an X60 as well, and I'm having similar difficulties with sound. If the sound works, it seems to work fine until a power event (reboot, sleep, or hibernate). After waking or cold booting, I've got about a 30-40% chance that sound will work. Unloading and reloading the alsa modules doesn't seem to help the issue at all. I've also tried fiddling with the gnome mixer, aumix, and alsamixer when this occurs and none of those tools have any effect.
