Latest stable 7-zip version (9.20) is in Debian experimental since April
2011, I don't know why this version still isn't included in Debian
Unstable, maybe Debian packager - Mohammed Adnène Trojette could tell us
why he put latest stable p7zip version to experimental instead of
unstable?

Here is debian/changelog:

p7zip (9.20.1~dfsg.1-1) experimental; urgency=low
  * New upstream release (Closes: #620619)
  * debian/control
     + bump Standards-Version to 3.9.1.
     + update and improve description. (Closes: #545871, #612770)
  * manpages
