Thanks for the suggestion, but those instructions are for 10.04. This is primarily a Unity problem (with the Dash).
I think I have worked around the problem by deleting local .desktop shortcuts for mail programs from ~/.local/share/applications, copied /usr/share/applications/evolution.desktop to ~/.local/share/applications, reset Evolution as my preferred email client and the Dash is now correctly displaying Evolution. It could be that this problem was just specific to my setup, but I'll leave the bug here.
