It looks as if it is fixed now, maybe a by-product of a fix for bug #752013 that was reported as fixed (email I got 06/04/11 17:52).
I run the update manager this evening and it was able to update all of the libraries that ffmpeg needs, then synaptic could add ffmpeg back in as normal. Will check with others that won't have fiddled with things, but looks as if its now solved.
