Tried duplex printing with HP OfficeJet Pro 8000 on Ubuntu 10.10 with latest HPLIP release 3.11.1. Yes "Double-Sided Printing" option is grayed out under "Installable Options", but setting "Long Edge (Standard)" under "Print Settings" tab does the printing double sided.
