Thanks for the extra info Alex. Don't worry about the /sys files - nouveau doesn't actually place anything useful in those files (the -intel driver puts stuff there in case of gpu, which is probably why it was recommended to collect it).
The file that we need is the output of 'dmesg' from while the system is locked up. So either reproduce the lockup or wait until it occurs again, then ssh into the box and run 'dmesg > dmesg.txt' and attach that file. Next, after collecting that, please turn off 3D - uninstalling mesa-dri- experimental is probably the most sure-fire way of doing that - and then see whether you can reproduce the lock up. Guessing it will not lock up after that.
