Found a workaround via the Nouveau bug tracker to this which is to turn off acceleration in Nouveau.
sudo touch /etc/modprobe.d/nouveau-kms.conf (guess it can be called something else ?) add "options nouveau noaccel=1" to this file and restart, making sure the nouveau driver is installed and there is no trace of the nvidia binary driver on the system or in any xorg.conf/xorg.conf.d file (that part bit me). Multiple monitors with KDE desktop effects have been working for a couple of days or so with this setup.
