Thanks for the feedback! I've updated the repository with some bug fixes. Evolution should reappear on the taskbar and in the pager after you restore it and you should be able to compose->close evolution->send without evolution quitting on you.
Show at startup works on one of my machines and doesn't work on another. When it doesn't work it pops up without the taskbar, which makes me thing that something other than my code is causing evolution to be displayed and might be hard to track down. So your mileage may vary with this option but it doesn't affect overall functionality. An additional issue is that if evolution is hidden and you click "edit" in the clock applet then evolution appears without the taskbar.
