Ok, in the menu editor there were two entries for evolution, one that started evolution with a --express option and a disabled entry that started it without --express. I switched the two entries and now everthings normal again. The package maintainers should consider issueing an update to leave express mode off by default. I found it frusterating and the reason for the changes in the interface wasn't made clear.
