This was pilot error - I mistakenly read the screen which prompted for username as asking for the iSCSI initiator ID, and had entered a value on that screen, which explains why the installer insisted on a password. I have repeated the install leaving the username field empty, and was not prompted for a password. Sorry for the confusion.
