I have found a suitable work-around for my needs; I was one of the many frustrated by this change, and yet another reason I feel that Ubuntu's overall progress is decreasing.
I take no credit for figuring this out, but the post that helped me is here: http://www.webupd8.org/2010/06/nautilus-elementary-2311-now-with.html I followed the instructions for adding the PPA, and then clicked "Edit", "Customize toolbars...".
