Matt, you also seem to have a Xerox WorkCentre 7228 printer configured, but it doesn't actually turn up in your recent screenshot. Does this actually exist? If so, does printing to that one work? It's connected through the same mechanism (dnssd), and I wonder if it's that protocol which is broken with cups (a similar report in bug 566887 seems to indicate that), or whether it's the actual printer driver which is broken.
Can you please launch the printer setup tool, Server -> Settings -> Save debugging information for troubleshooting, OK the dialog. Then try to print something. Disable the debug logging checkbox again, and attach /var/log/cups/error_log here. If the other printer also does not work: Is it possible for you to attach the printer directly via USB? It should get automatically discovered and configured. Does it print then?
