Looks like I spoke too soon. I removed all the commas from the display
names in my address book and yesterday that seemed to do the trick. But
today, the problem has returned and I haven't changed a thing.

So to restate the bug with new information:

Thunderbird inserts quotation marks around the part of the email address
before the "@" when inserting addresses from the address book. This bug
seems to occur with most but not all of my email addresses and I have
not been able to determine why.

Work-around for me is, after double clicking on an address to insert it
into the "To" field, I just manually remove the quotation marks.
