The crash file shows:
 Traceback (most recent call last):
   File "/usr/bin/update-manager", line 43, in <module>
     gtk.init_check()
 RuntimeError: could not open display

This indicates that update-manager can not connect to your display for some 
reason. 
When you reproduce it, what is the output of the command:
$ echo $DISPLAY

If you're upgrading from a console use the command 'do-release-upgrade'
instead.
