All right the back trace didn't go as well as I'd like and this is the
first time that I've tried to get one so I might be doing it
incorrectly.

I set up the debugging sources as described and tried to use gdb on
gnome-panel with the assumption that this will provide you the required
logs to use. However I got into some troubles running gdb on a process
that hasn't crashed/ isn't going to crash but is just behaving
strangely.

The log also told me that there were no debugging symbols for the clock:

Reading symbols from /usr/lib/gnome-panel/libclock-applet.so...Reading symbols 
from /usr/lib/debug/usr/lib/gnome-panel/libclock-applet.so...done.
(no debugging symbols found)...done.
Loaded symbols for /usr/lib/gnome-panel/libclock-applet.so

So is there any other way of progressing this bug?
