FYI - I tried a number of things here with little to no success other
than installing the latest version of nVidia's driver directly from
their website. Might as well close this bug.

For anyone that comes across this in the future, here's what else I
tried:

1. Using the "nv" driver by adding Driver "nv" to xorg.conf - resulted
in Low Graphics Mode and message "(EE) No devices detected"

2. Using the nouveau driver by adding Driver "nouveau" to xorg.conf and
grabbing appropriate packages - resulted in a black screen that didn't
even allow access to terms via Ctrl+Alt F6 etc. Booted from CD to fix
xorg.conf as entering single user mode from grub wouldn't work as the
recovery console was not responding to keyboard correctly (sigh)

3. Tried flashing mobo BIOS but stupid download from Acer.com doesn't
work with Vista (and obviously not Ubuntu either)

Anyway, installing the latest driver from nvidia.com fixed the issue -
version 185.18.31 - hopefully doesn't break anything else....
