I think I have a similar issue. I also removed the splash option from
the kernel, and I was also prompted to keep my modified version of
menu.lst.

However, I remembered what I had done and choose to use the maintainer's
version. Now, menu.lst does not reflect what is presented at boot time.
It doesn't matter what I do to menu.lst, the new kernel does not show as
an option. menu.lst shows 2.6.27-11 as the newest kernel, but the boot
menu shows 2.6.27-9 as the newest available kernel. Also, the non-
recovery options all have the splash option, but there is no splash
option at boot time. No matter what I do to menu.lst, it is not
reflected at boot time.

There are no other .lst files in /boot/grub/. I am going to try and
remove the other kernels. I just didn't want to make my machine
unbootable.
