Oh, Ubuntu Intrepid recently updated, Nautilus 2.24.1 A bit more clicking around revealed that it depends on the TIME between pressing shift and clicking.
Sometimes, when you press the shift key, the little triangular expander on the first subdirectory turns black for a short while, between a tiny fraction of a second up to about half a second. If you click soon after pressing shift, while the expander triangle is still black, then the subdirectory expands.
