However my main focus here is to report Ubuntu changes to Debian, not the content of the changes. And as I don't know much about desktop files myself, I can't really give an educated opinion. I do know however, that in the current GNOME menu layout, adding "Math" doesn't make any difference anyway, the menu entry will be in the "Education" group in the menu (even the "Science" doesn't really do anything). I believe this category thing have been discussed before (either here or ubuntu-motu list), if you are interested in improving the desktop files in Ubuntu, feel free to read those discussions and raise new concerns.
