I can't reproduce this on a current release (I tried 15.04). The very latest 10.10 is affected too. Launch the preferred applications window in Gnome and try changing any of the apps, such as the default app for playing video. The change will seem to take but opening a video will continue to launch totem as the video player. Same situation with the rest of the settings from the preferred apps window.
