"systemctl edit" is just a helper that simplifies the following common
admin operation:
# mkdir -p /etc/systemd/system/foo.d
# vim /etc/systemd/system/foo.d/override.conf
# systemctl deamon-reload
The drop-ins logic (which this makes use of) is documented in the
man-pages, please have a look.
