If you use postfix, you should take a look at postgrey
(http://isg.ee.ethz.ch/tools/postgrey/). It is postfix implementation of
greylisting. It eliminates 99.9% spams on my server. Your mileage may vary
a bit. Couple it with antispam software such as dspam or spamassassin to
eliminate any spam that can pass greylisting.
