I have squirrelmail up and running fine except that it will not send messages. When I try to send a message, it say Error:"" and then Server Replied:"", and then the rest of the compose page below. I already made sure that "file_uploads" was on in php.ini and that smtp was pointed at my server. Any help would be appreciated.

try getting log information from your SMTP server (presuming you are not using sendmail, as you are on Windows, but it would actually be useful for you to post the relevant server config information here too). Does your SMTP server require auth? Need more details....
