I'm following up here for the archives' benefit...  With a little more
Googling and some trial-and-error, I figured out a solution:

1) cd into your default maildir, usually ${HOME}/Maildir
2) maildirmake .folder1-name
3) maildirmake .folder2whatever
4) Rinse and repeat as necessary, keeping in mind to use the dot
5) Adjust your delivery rules to deliver to the new maildirs
6) Log into SquirrelMail, click on Folders, and subscribe to the new folders
   it should now recognize

I'm a big MARC fan myself - it's nice having a quick, clean interface with
all of my lists archived.  :)
