SquirrelMail doesn't need "building"... it's web scripts... just
configure apache/php to work, and then you should be set to go.

As for specifying an IP address, for which part? You can use an IP
address for the imap/smtp server, but if you wanted to use an IP
address for the outgoing domain, you have to encase the IP address in
[ ], for example: [127.0.0.1] then you should be okay (I think that's
how the RFCs specify it anyway).
