Check out the VLogin plugin (Virtual Host Login).  It can be configured to
point to a different IMAP server on a per-domain (or per-user) basis. 
There is also another plugin based off Vlogin that gives you a pull-down
on the login page where users can choose their IMAP server.  This one has
a few minor issues (which I could clean up), which might be why it never
made it to the SM website.

Please note that I will be uploading a new version of this plugin later
today or tomorrow, so you might want to wait a day to get the latest
version (includes a much easier to read README as well as per-user
settings and other new functionality & small tweaks)
