Check out the VLogin plugin (Virtual Host Login). It can be configured to point to a different IMAP server on a per-domain (or per-user) basis. There is also another plugin based off Vlogin that gives you a pull-down on the login page where users can choose their IMAP server. This one has a few minor issues (which I could clean up), which might be why it never made it to the SM website.
