Do you rin linkx locally on the proxy server? In such case you need to use NAT rules in OUTPUT as well I think, and use a kernel with support for NAT of local connections, and use a user match to allow Squid to go out (if not you will create a loop). Interception normally only works for clients running on other stations in the network, using the intercepting server as gateway/router.
