That page has links that will give you the instructions for setting up Tomcat, Jetty and Resin. I used the Tomcat ones the other day, and it gave me everything that I needed to get it up and running. You basically just need to create a new directory to contain the second instance, then create a context file for it in the TOMCAT_HOME/conf/Catalina/localhost directory.
