Daniel: There's no preferences section in the admin UI. That said, it's all angular js and the source is there wherever you unpacked the package you could just change it. There's no need to rebuild Solr etc....
BTW, the mail server is pretty aggressive about stripping attachments, your (presumed) screenshot is blank....
