Making the desktop environment use all of the possible features would probably be a matter of rewriting many individual apps (file managers, media players, etc), something I'm really not very interested in doing. A desktop and window manager (see videos above) would be much more interesting for me

I hadn't actually seen uTouch before, looks interesting. However I think the difference is that (for now) it seems to be an adaption to use some multitouch features on a standard gnome/unity/whatever desktop. What I'm thinking about is a different UI designed around multitouch, something like this
