I should have noted in my original post that I have already tried your suggestions, unsuccessfully. However, your reply made me look further into the matter. When I set encoding=utf-8, I occasionally get some weird ultisnips warnings. I tried disabling ultisnips, and now binding with utf-8 work

Vim is unable to map non-ascii keys (æ, ø, å) in my utf-8-encoded .vimrc. I am using Scandinavian letters (æ, ø and å) in mappings and as leader. When changing 'encoding' from latin1 to utf-8 and writing/sourcing my .vimrc (as utf-8), the mappings break. I asked on StackOverflow for help (link t
