I should have noted in my original post that I have already tried your
suggestions, unsuccessfully.
However, your reply made me look further into the matter. When I set
encoding=utf-8, I occasionally get some weird ultisnips warnings. I tried
disabling ultisnips, and now binding with utf-8 work
